Quick Ideas For Stuffing A Tortilla Wrap For Lunch Picnics

We are having nice weather once again here already and the outdoors are calling us to breathe the fresh air.  I love having picnics just out in out backyard.  Grab a basket and a tablecloth and stuff it with some of these easy stuffed tortillas.  I don’t really know what to call them, quesadillas, wraps, tacos, stuffed tortillas?  You may find a more creative name.  Here are just a few ways I stuff these tortillas, although, I have done it in many other different ways depending on what I have.  The preparation time will be faster if you have a big enough pan that you can fit two folded tortillas and/or two pan.  I am able to make three at a time.

Quinoa Quesadilla

Tortillas (Right now, I am using a sprouted wheat kind)

1 cup cooked quinoa

1/4 cup chopped cilantro

1 cup corn kernels

1-2 cups raw cheese

olive oil or ghee

1 tsp salt (optional)

Preparation:

In a bowl, combine all ingredients except the tortilla and oil. Pour a little olive oil or ghee on a pan big enough to hold the tortilla flat.  Spread some of the mixture, about 1/3 cup, over one half of the tortilla.  Fold it in half and cover the pan with its lid.  Wait about 1  -2 minutes and flip it.  Cover, and wait another 2-3 minutes.  Basically, you want the cheese to melt.  Repeat with each tortilla until you are done with the mixture.

Spinach Quesadilla

tortillas

5 eggs (or one per person)

2 cups chopped spinach

1-2 cups raw cheese

2 Tblsp organic milk

unrefined salt (optional)

Preparation:

In a bowl beat the eggs, add milk and salt and mix. Add spinach and cheese and mix.  In a skillet pan, pour a little olive oil over medium heat.  Place flat tortilla and pour about 1/3 cup of the mixture over half the tortilla.  Fold it, cover the pan and wait for about 3 minutes. Flip it to the other side and wait another 3 minutes or so.  You want the eggs set, then it’s done.  Repeat with each tortilla.

Filling Potato Wrap

Tortillas

2 Potatoes

5 eggs

1-2 cups raw cheese

1 tsp unrefined salt (optional)

2 cups chopped spinach

1 chopped onion (optional)

olive oil or ghee

ketchup (optional)

Preparation:

Chop potatoes in small cubes or if you have a vegetable cutter, cut them in sticks.  Heat to medium heat, add oil, grill onion if using and then add potatoes.  I add just a little bit of water to soften them more.  Cover pan and wait about 5-7  minutes until potatoes are soft.  In a bowl, mix the eggs with salt, then add spinach.  Pour egg mixture over potatoes and mix in pan.  Cover again and wait for eggs to cook.  Turn one time.  Warm the tortillas in a toaster oven, stove oven or pan.  Spread some olive oil on the tortillas so they won’t get hard.  Stuff the wrap and sprinkle some cheese and put a squirt of ketchup if desired or some fresh homemade salsa.
